Ever wondered why one coffee has that clean finish and another tastes fruity?

It's all in the processing method.

In natural processing, the coffee cherry is dried whole in the sun. This brings out the sweetness in the cup.

Washed-processing, on the other hand, is where the skin and fruit are removed from the bean. The coffee is then washed before it is dried. This gives it a crisp, clean profile.

It's praised for being of high-quality with a bright acidity and floral aroma.
