It took me 3 years to successfully make this nettle kombucha! 🫠

If at first you don’t succeed, try try and try again! And I’m really glad I did as this has become a Spring seasonal favourite since finally cracking the golden ratio last year. 🥇

Nettles are an incredible, nutrient powerhouse of a plant! So much so that they can be quite hard to ferment with, as I discovered. But when successfully fermented, our happy microbes further amplify their nutritional value - winnerrr 💥

For those that are yet to try it, the flavour is sweet and earthy with herbaceous notes and hints of cucumber and gentle lime. Spring in a bottle! 🌿

Nettles contain natural antihistamine and last year a few customers told me that it was really helping their hay fever symptoms, which was very cool to hear! As ever, this is not health advice - please do your own research and try for yourself to see what works for you 🌼

HOPE YOU LIKE CROWN CAPS?! Because that’s what we’ve got for a while! 👑🍾

Thanks to another nice surprise from our bottle supplier, we now have crown caps for a while on our 250ml bottles! It was either this or have no bottles to put kombucha in at all, so hopefully you’ll agree we made the right choice!? 🫠

Hopefully one of these days we’ll actually manage to get a break… but for now, we’ll just keep on trundling on against the wind! 💨

In the meantime, I think they actually look pretty cool! If you’ve picked one up already then you may have noticed they’re a touch heftier too. If you’re missing the screw caps already then rest assured we’ll be through these in the next month or so… in fact, the more you buy, the faster we return to the screw caps! How about that for motivation 😏

🌸✨ PART 2: Tasting the magical magnolias

After a full day of harvesting magnolia for this year’s seasonal kombucha (out now! 🥂🍾), curator extraordinaire William Dyson took us deeper into the collection at Great Comp Garden for something we’d never done before … a full magnolia tasting session 🌸

With over 80 different species growing in the gardens, we spent the afternoon tasting tepals straight from the trees 🌳 Honestly, the range of flavours blew us away. Some were peppery and ginger-like, others delicate and floral. Every variety had its own character, its own story, and its own potential for future booch making 🫙✨

Huge thank you again to William and all the staff at for letting us into their little world for the day. It’s moments like this that make seasonal brewing so special: getting to work directly with nature, tasting ingredients at their source, and discovering flavours you simply couldn’t dream up in a lab 🍃💫

🌸✨Magnolia season has arrived … and it’s one of our favourite times of year.

We’re at near Sevenoaks and William (its curator extraordinaire) has kindly given us access to his 80+ species of magnolia’s for this year’s Magnolia Kombucha harvest 🍃

Magnolias are one of the first signs of spring, and every year they bring a real sense of hope for the warmer months ahead. Did you know they date back millions of years and were once pollinated by beetles before bees even existed? 🪲✨

After a full day of picking, we collected nearly 11kg of fresh magnolia flowers 🌸The result? A truly one-of-a-kind kombucha. It’s a bit like a grown-up cream soda, with notes of vanilla, cardamom, smoke, and spice🥂

The UK may have forgotten this fruit, but I didn’t. It changed my life🍐✨

Quince, part of the apple & pear family, quietly slipped out of fashion, yet its intensely aromatic, almost tropical, softly perfumed flavour is unforgettable 🌿🌼 I’ve been hooked ever since my grandad handed me a jar of homemade quince jam from his garden when I was a teenager 🍯

Every year, we’re lucky to receive an abundance from friends with trees full of fruit but not enough ways to use it 🙌 Over 100kg of quince, generously donated by Sally at in Faversham and the brilliant 🌳

We teamed up with in Aldington, using their jet washer and fruit scratter. It saved us litterally hours of work and reminding me how special it is to share skills and resources within this community 🤝✨ The generosity in the drinks world never ceases to amaze me 💛

We make enough quince to last through winter into early spring and, true to form, I’m only just talking about it as the season wraps up 😅 If you want a taste, now’s the time ⏳ Grab a bottle before it disappears, or drop a note in your order to make sure it’s included 📦

🚨IMPORTANT UPDATE ON BOTTLE RETURNS🚨

After 5.5 years of running our bottle return scheme, we’ve made the difficult decision to pause it … at least for now.

Together, we’ve saved thousands of bottles from landfill, something we’re incredibly proud of. But rising costs, added taxes, and the reality of scaling a small business means it’s no longer something we can sustain right now.

Here’s what’s changing:
•⁠ ⁠250ml bottle returns have now stopped
•⁠ ⁠750ml returns will continue for a short time but our stockists have stopped discounting for them
•⁠ ⁠Bottle return discounts on one-off orders have ended
•⁠ ⁠Subscriptions still get 10% off + bulk savings

This wasn’t an easy call to make, but sustainability is still at the core of everything we do, and we’re committed to finding new ways to reduce our impact as we grow.
