Why do we add milk to our tea? Does it enhance the flavour?
It is believed that tea drinkers in the UK initially started incorporating milk to modify the base flavour of the tea. Using milk was a method employed by the British to soften the taste and mitigate the bitterness in tea or coffee. The tannins present in tea contribute to its bitter flavour, and incorporating ingredients such as milk or sugar enabled drinkers to diminish the bitterness, making the beverage more palatable.
Nevertheless, if you master the art of brewing tea correctly, I question the necessity of adding any extra ingredients.

As the weather turns colder, let's talk about temperature.
Why is temperature so important for tea?
Temperature is crucial for brewing tea because it affects the flavour, aroma, and overall quality of the tea. Different types of tea require specific water temperatures for optimal brewing.
Green tea: Typically brewed at lower temperatures (around 175-185°F or 80-85°C) to preserve its delicate flavours and prevent bittleaerness.
Black tea: Brewed at higher temperatures (around 200-212°F or 93-100°C) to extract the robust flavours and caffeine.
White tea: Brewed at a lower temperature (around 185-195°F or 85-90°C) to maintain its subtle and mellow characteristics.
Oolong tea: Brewed at varying temperatures depending on the type of oolong, but generally between 185-205°F (85-96°C) to bring out its unique flavours.
Herbal teas: Usually brewed at boiling point (212°F or 100°C) since they don't contain tea leaves and won't become bitter.
Brewing tea at the right temperature ensures that the leaves release their desirable compounds and flavours while minimising undesirable bitterness or astringency. It's a critical factor in achieving the perfect cup of tea.

Tea from India originates from the slopes of the Himalayan mountains.

The dry leaves are a mix of medium-sized brown leaves, twisted lengthwise, intertwined with silver and golden tips.

Upon infusion, the tea displays a beautiful golden copper hue.

Its aroma is characterized by fruity notes, accompanied by hints of roasted nuts, sweet flowers, a touch of greenery, and a pleasant underlying hint of vanilla.

We love to drink our Darjeeling using wine glasses. After all, in the tea world, Darjeeling is a Champagne of the tea!

In the grades of Matcha, there is a distinction to be made.
One of the highest grades, Imperial ceremonial, stands out for its superior quality.

Please note that matcha grades can differ based on factors such as quality of leaves, processing techniques, and harvesting seasons.

The Gold Standard ceremonial grade provides a well-rounded matcha experience with a harmonious blend of flavours.

The Silver ceremonial grade offers a satisfactory matcha experience with a touch of bitterness and a gentle aroma.

Matcha is often used in traditional Japanese tea ceremonies and can also be incorporated into various recipes, such as lattes, smoothies, and desserts. Its unique processing method preserves a higher amount of antioxidants and nutrients compared to other green teas.
