My Homemade chilli con carne was a hit! 🌶🌶🌶
Served mine on a bed of steamed rice topped with guacamole, grated cheddar, spring onion, jalapeños, sour cream and sauté broccoli and chilli kimchi 😋
Ingredients:
500gm Grassfed beef mince (plant based mince can be used if vego)
Can of 4 bean mix
Can of chickpeas
2 onions diced
4 cloves of garlic
1 can corn
1 carrot and 1 zucchini both grated
Can crushed tomatoes
Chilli con carne seasoning
Chilli flakes pinch
Dried oregano teaspoon
Tomato paste 2 tablespoons
Rice bran oil
250gm of cheddar grated
1/2 cup of water (or vege stock)
1/2 broccoli chopped
2 tablespoons of chilli kimchi
* Method *
1) In a cast iron pan add some oil and Sauté onions, garlic, carrot and zucchini till soft and translucent
2) Add mince and cook till brown
3) Drain and rinse the beans and corn and add to the pan and cook for 4 minutes
4) Next add in chilli con carne seasoning, chilli flakes and dried oregano and tomato paste
5) Pour in the crushed tomatoes and water and mix well till combined. Let the chilli simmer on low for 25 minutes till sauce is nice and thick
6) In another pan saute broccoli for 2-3 minutes mix in chilli kimchi and set aside
Dish out the chilli into a nice big bowl and top with sour cream, guacamole, grated cheddar, pickled jalapeños, and broccoli chilli mix.
Serve with steamed rice or corn chips whatever you choose it’s going to be good 👍🏼
