Year after year, I get to create more and more LEGO cakes, for the little and big LEGO fans who cross oceans to celebrate their special days right here in Billund 🧱✨

It is such a joy knowing that my cakes get to be the sweet finale to their cherished vacation memories.

This particular cake was so special. The mom reached out months ago to plan her son’s birthday, and while the design holds a nostalgic spot in my heart, the flavor was the real star of the show.

Her son’s absolute favorite fruit is watermelon 🍉

Now, simply adding artificial flavor or pink food color just wouldn’t do and a true watermelon lover would spot the difference instantly!

But fresh watermelon slices would leak juice all over the cake layers. After a bit of kitchen experimenting, I found the perfect solution: a fresh, homemade watermelon compote that preserved all that vibrant flavor and subtle crunch, and a watermelon juice infused syrup without turning the cake soggy.

The result, A refreshing watermelon compote paired with silky fresh cream between layers of soft vanilla sponge flavoured with fresh watermelon syrup !

Reading the mom’s message that said that the cake was the highlight of their party made every bit of effort worth it. Moments like this are what I work so hard for!

Most of the time, I’m baking cakes for little ones, ordered by their loving moms. But every now and then, kids who are all grown up, reach out to order a cake for their moms, mostly for their milestone birthdays.

That just feels so wholesome, like coming full circle. It makes my heart full thinking about how happy that mom will feel switching places, finally getting to experience the joy of a cake baked just for her!

This humble carrot cake was one such bake, ordered by a sweet daughter for her mom’s 70th birthday. 🎂

“Just a simple carrot cake?” You might ask. Far from it!

It’s the moistest sponge infused with warm spices, packed with crunchy nuts and juicy carrots, and layered with silky-smooth cream cheese frosting, exactly the way the birthday mom loves it. ✨

I can’t help but wonder how many birthday cakes she has baked for her family over the years. But this time, it’s her turn to sit in the special chair, be showered with love and wishes, and devour a cake made entirely for her.

Then one day, one of the kindest women, ANASTASIA MADSEN I know ordered a birthday cake for her son.

When I think of her, I see a true multi-passionate artist! Someone who crafts beautiful creations, builds wonderful communities, and inspires a healthy lifestyle for the mind, body, and soul. She is the kind of person who cheers for you before you’ve even met in person. Truly the kind of woman I look up to ❤️

This woodland autumn scene has my heart. I created each tiny detail with so much care, wanting it to look like a magical frame taken straight out of a vintage children’s storybook ✨

I’m so happy with how this little forest world came together. Thank you, ANASTASIA MADSEN so much for trusting me with such a special cake 💝 I wish every seed of your mission to create a community of wonder women with healthy body and mind bloom into reality 🎉

CUPCAKE WORKSHOP 🧜‍♀️

Last weekend, I got lost in a pink underwater wonderland!

It was a little girl’s mermaid-themed birthday, and I had the absolute joy of hosting a custom cupcake workshop. what a dream!

The party was pure magic, filled with sweet energy and wonderful girly, pink vibes. It was so charming to watch the girls play with unique color combinations, textures, and patterns to create their own incredible details.

I went in to guide them, but I ended up learning so much from them in return. They had zero boundaries with their imagination, and their creativity truly peaked!

Many thanks to the mom for trusting me with such a special event. I’ll cherish this memory for the rest of my baking journey. Happiness upgraded to so many levels! 🩷
