The cuisine presents elements of novelty while still maintaining a familiar Mediterranean feel. There’s the “Chef’s recommended 7-course menu”, the “5-course menu”, and the “Vegetarian menu”. Each item on the menu is described briefly, but you’ll need to wait for the dishes themselves to uncover each of their nuances. It’s like knowing the general plot points of an operetta, but being surprised by

the unique characteristics of each cast member’s performance. Moreover, each menu features a variety of very different dishes, which makes for an entertaining and diverse culinary trip . Textures range from creamy to firm, and rough to smooth, while different tastes play together in a cleverly orchestrated balance. All is assembled as a delightful work of art, with vibrant colours framed by large white plates for maximum visual appeal. The portions are petite, but as the meal progresses and reaches its conclusion, you will find yourself satiated and satisfied. You might find the seared, rare Tuna with a Harissa mayonnaise that exudes a pleasant heat without being spicy, or the 48 hour sous vide suckling pork belly, with pulled shoulder meat, and an offal croquette. The caramelised banana with salted toffee and peanut textures makes for a classy conclusion. It’s an experience for all the senses.
