Belated Mother’s Day & Grandpa’s BDay celebration - no better way to express my gratitude to my matriarchy than through the creative outlets they’ve always encouraged and inspired!
On the menu:
- white peach & honey goat cheese focaccia, served with burrata, basil, and EVOO + balsamic
- big juicy arugula salad + chicken
- brown butter almond choco chip cookies

For Easter brunch I tried to make a carrot cake cinnamon roll focaccia but she was too thick to dimple… should’ve been a loaf? It was still DELICIOUS!

I subbed the water in my regular focaccia dough for pineapple juice. Before baking I added in a brown butter cinnamon roll filling, shredded carrots, and toasted pecans! After it cooled, I topped it with a brown butter cream cheese frosting and more pecans. I think the Easter bunny liked this one!

MY VISON! The EX*****ON!

I had my doubts when my pistachio cream didn’t set properly but these ooey gooey beauties turned into everything I could’ve dreamed!

I used brown butter choco chip cookie recipe from BUT did my own flair:
- infused the brown butter with whole cloves 🤤
- 1/3 fresh milled wheat flour (added to the nutty vibes)
- added some chopped salted pistachios
- pistachio cream for a filling
- lil salt on top

Leveling up my sourdough focaccia by adding some mozzarella and Parmesan and eating it with EVOO, balsamic & homemade pesto! Had some cheeses to use, a bag of Brazil nuts, and a dream 🌿

My (usual) sourdough focaccia base (it can be tightened - but I’m an almost lazy baker) is as follows:

• 375g room temperature water
• 20 g honey or sugar
• 65-90g ripe starter
• 500g bread or all-purpose flour
• 9-12g salt
• EVOO

- Add water, starter, and honey/sugar to a bowl and whisk together (Bubbling indicates starter is ready)
- Add flour & salt and mix until almost combined
- Drizzle some EVOO and finish incorporating (dough may not look cohesive)
- Cover and rest (a total of 8-12 hours, until jiggly)
- Perform folds every 30 min for the first part of the bulk rest (at least 1x up to 5x)
- Transfer to oiled baking dish (I often line with parchment as well; I’ve used Pyrex, a baking sheet, cast iron, etc)
- Let rise in baking container for 2 hours on the counter before baking
- Alternatively, Refrigerate (covered) up to 24 hours (I’ve left it longer and still had satisfactory focaccia)
- Add toppings of choice ( fan fav: tomato, garlic, shallot, rosemary) with olive oil and salt!
- Bake at 425 F for 25min

Did you know that October is Breast Cancer Awareness month? I had the joy to fashion some pink earrings for breast cancer patients at a Washington state hospital for this month. This was a daunting task, but I’m so grateful to have been chosen for it!

After a social media reprieve, I’m hoping to be a bit more active on here. As many of you know, I’m not doing many market or consignment opportunities due to my work-life-school schedule, but I’m always up for a custom order (they’re the most special anyway :).

Customs are a unique way to build connection and show appreciation. The requestor picked these shells out on a family trip in Hawaii, with the intent to have them made into custom necklaces.
