Charm your guests with these easy and elegant ginger-oat scones. They’re perfect for weekend brunch or tea AND a great addition to Mother’s Day breakfast 😉😉

Ginger-Orange and Oat Scones

1 1/2 cups Silver Palate Oatmeal
1 1/2 cups A.P Flour + more for dusting
1/3 cup granulated sugar
1/2 teaspoon nutmeg
2 teaspoons baking powder
1 teaspoon kosher salt
10 tablespoons unsalted butter, chilled
Zest of one orange
1/4 cup candied ginger, finely diced
1/2 cup buttermilk + 2 tablespoons for brushing
1 large egg, whisked
1 teaspoon vanilla extract
Preheat the oven to 425 degrees F
place the oats, 1 1/2 cups flour, sugar, nutmeg, baking powder, salt, in the bowl of a food processor and pulse to just combine. Add in the chilled butter and the orange zest and pulse until a coarse crumb forms. The mixture should look like wet sand.
Remove the mixture from the food processor and add to a large bowl. stir in the ginger, 1/2 cup buttermilk, egg, and vanilla and stir until a wet ball of dough just comes together.
Dust a cutting board or counter top with flour and place the dough on the flour. Dust the top of the dough with a little more flour and form into a square shape, pressing down evenly. The dough should be about 2 inches high. Cut the dough in half and place one piece on top of the other and press down with your hands to form another square. Cut the dough into squares or triangles and place on a parchment lined baking sheet. Bake for 12-14 minutes, rotating half way through. Serve with fresh fruit and cream.

To make this Valentine’s Day a special one, we’ve adapted our classic Crème Brûlée recipe (pp. 375) in the Silver Palate Cookbook by adding what else? CHOCOLATE!!!! Dark chocolate and cocoa powder + a little splash of espresso make this French classic equally perfect for a romantic evening for two or an elegant dinner party. 🍫🥂😍

Double Chocolate Crème Brûlée
Serves 6

1/4 cup sugar
2 tablespoons cocoa powder
2 1/3 cups heavy cream
2/3 cup milk
3 whole eggs
3 egg yolks
1 teaspoon vanilla extract
4 oz. Dark chocolate, melted
1 oz brewed espresso, optional
1/2 cup -3/4 cups light brown sugar

Preheat the oven to 300 degrees F
Whist together sugar and cocoa powder in a medium saucepan pot. Add in the cream and milk and bring to just a simmer and remove from the heat.

In a separate large bowl, whisk together the eggs and yolks until well combined and then add in the vanilla and cooled espresso. Little by little and while whisking constantly, slowly add in the milk mixture. Once all of the milk and cream have been added then pour back into the pot and cook over medium low heat for two more minutes to bring back to almost a simmer. Remove from the heat and add the chocolate.

Strain the chocolate mixture through a fine strainer into a measuring cup to remove any lumps. Pour the mixture into 6 custard dishes or one 2 qt. Baking dish Place the crème brûlée into a roasting pan or high sided baking pan and place into the oven. Using a tea kettle or measuring cup, fill the roasting pan 1/2 way up the sides of the crème brûlée baking dish or dishes to create a water bath.

Cook for 20-25 minutes if making 6 or 30-35 minutes if making one larger dessert. The edges should be set and the center should jiggle slightly when ready. Remove the pan and set aside to cool.

Place the ramekins or baking dish in the fridge, covered to chill. When ready to serve, turn the broiler to high and place the dessert on a baking sheet. Sprinkle evenly with the brown sugar and place under the broiler for about 1 minute watching the whole time, until caramelized and bubbling but not burnt. Remove and serve.

It’s going to be cold this weekend so we’re staying in and keeping warm with one of our most versatile sweets, perfect morning, noon, or night. Get cozy with our simple yet delicious Zucchini Bread, from The Silver Palate Cookbook pp. 307.

Zucchini Bread

Butter for greasing the pan
3 eggs
3/4 cup vegetable oil
1/2 cup sugar
1 teaspoon vanilla extract
2 cups grated, unpeeled, raw zucchini
2 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 cup walnuts, chopped

Preheat oven to 350 degrees F and butter a 9x5x3 inch loaf pan. In a large bowl, beat the eggs, oil, sugar, and vanilla until light and thick. Fold the zucchini into the egg mixture.
Sift the dry ingredients together into a separate bowl and stir into the zucchini mixture. Fold in the walnuts.
Pour the batter into the loaf pan and bake on the center rack until cake tester comes out clean when inserted into the center, about 1 hour 15 minutes. Cool slightly and remove from pan then cool completely. Enjoy!!
