COPA Restaurant & Bar is now open at 427 S Burnside (Old Dalton’s).
To understand COPA, you must first understand the meaning behind the word “Cruzan.”
Crucian/Cruzan (crew-shun) refers to the people of St. Croix in the U.S. Virgin Islands. A culture shaped by African, Caribbean, European, and island influences—woven together over generations.
The roots of Crucian culture run deep. Through hardship, colonial history, migration, music, food, craftsmanship, storytelling, and celebration; the people of St. Croix created something uniquely their own. Something soulful, resilient, expressive, and full of pride.
You feel it in the steel pans of our music.
You hear it in the cadence of our voice.
You taste it in the food we put on our plates.
COPA: Cruzan Creole, is our way of honoring those roots while blending them with the bold spirit and unmatched flavor of South Louisiana.
Not a trend.
Not a theme.
But a culture. A rhythm. A story.
