Crockpot Cheesy Potatoes & Beef Kielbasa 🧀

1. Peel and cut 4–5 russet potatoes into bite-sized cubes. Dice 1 small onion and slice 1 package beef kielbasa into rounds.
2. Add the potatoes, onion, and kielbasa to a greased slow cooker.
3. Add 1 can cream of chicken soup, 1½ cups shredded sharp cheddar cheese, ½ cup half-and-half, 2 minced garlic cloves, and black pepper to taste.
4. Stir everything together until the potatoes and kielbasa are evenly coated.
5. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
6. Stir well, then add another splash of half-and-half if you want it extra creamy. Sprinkle in additional cheddar and let it melt for about 10 minutes.
7. Serve warm topped with fresh parsley and cracked black pepper.

Creamy Pineapple Ranch Chicken 🍍 🍗

1. Place 3–4 boneless, skinless chicken breasts in the bottom of the slow cooker.
2. Sprinkle 1 packet ranch seasoning evenly over the chicken.
3. Add 1 block (8 oz) cream cheese on top.
4. Drain 1 can pineapple rings, reserving a little of the juice. Arrange the pineapple rings over and around the chicken. Add about ¼ cup pineapple juice for extra flavor and moisture.
5. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken reaches 165°F and is tender.
6. Shred the chicken directly in the slow cooker using two forks.
7. Stir everything together until the cream cheese melts completely and creates a creamy sauce. Cut some of the pineapple rings into smaller pieces and mix them throughout.
8. Let cook for another 10–15 minutes, then serve warm. Garnish with chopped parsley if desired.
