Our CBO’s first post!

PIG SHOTS: PART 1

My favorite smoked BBQ appetizer to make and eat are pig shots: cheesy bites packed into little shot cups made from… PORK! They go fast at parties, make great leftovers, and can even be baked in the oven.

Ingredients:

* 1 lb. thick-cut bacon
* 1 lb. smoked sausage or kielbasa
* 2 blocks cream cheese (16 oz. total), softened, or an equal amount of cream cheese spread
* 4 oz. shredded cheddar or Colby Jack cheese
* 2 fresh jalapeños
* Meat Church Texas Sugar BBQ Rub
* Meat Church Holy Cow BBQ Rub
* ¼ cup thin BBQ sauce for finishing (I prefer Blues Hog, available at Walmart and similar stores.)
* Toothpicks to secure the bacon
* Hot honey, optional

Meat Church is one of my go-to BBQ seasoning brands, and their products are available at Lowe’s, Home Depot, and butchers. But feel free to use any sweet-and-savory rub or your favorite seasoning blend.

TIP: Store-brand ingredients work great, so there’s no need to spend a fortune.

Stay tuned for PART 2, where we’ll assemble these bad boys and get them ready for the smoker! Tubbs

Day one of reading the bible in a year! Come with me on the journey!

Don’t judge the angle or how I look, it’s been a long day, but the intentions are good!
